PALAK / SPINACH PAKODA
Spinach / Palak Pakoda is a delicious and crispy fritters prepared with spinach leaves coated with spicy batter. This is very quick and easy to make. Also perfect snack for tea time or during rainy season. This even taste good as side dish for meals or variety rice.The flavor of garam masala and the grinded paste makes the pakoda taste yummy. Lets look at the steps of making this pakoda recipe.
Preparation Time : 10 mints | Cooking Time : 30 mints | Serves : 4
Ingredients :
Spinach(finely Chopped) – 3 Cup
Chickpea / Besan flour – 1 Cup
Rice Flour – 1/2 Cup
Ginger – 1 small piece
Garlic – 2 cloves
Green Chili – 3
Curry Leaves (chopped) – 1 Sprig
Cilantro (chopped) – 2 tbspn
Garam Masala Powder – 1/2 tsp
Salt – to taste
Water – 1/4 Cup
Oil – for deep frying
Method :
1. Take the g.chili,ginger,garlic and little salt to a blender and grind it to a fine paste. In a frying pan, heat the oil.
2. In a mixing bowl add chickpea flour, rice flour, spinach, cilantro, grinded paste, carom, garam masala powder and remaining salt. Mix all these ingredients well until combined. Add 1/4 Cup of water into the flour mix and make a stiff dough.
3. When the oil is hot, shape the batter into small 1/2 inch balls and drop it. Deep fry them until golden color and crispy in low - medium flame. Remove them from the oil once they are fried properly. Drain all the oil and rest them on the paper towel. Repeat steps until all the batter is fried.

My Notes :
You can use any other greens of your choice instead of spinach.
Also you can add few chopped mint leaves.
Use the spices of your choice and taste.
Dough should be stiff not watery.
Adding salt while grinding will makes you to grind easily. Instead you can add by grinding with water.
Cook slowly in low flame while frying these pakoras. It takes more time to get fried.
