PUDHINA CHUTNEY
Pudhina Chutney is a perfect accompaniment for Idli and dosa. This is the south indian chutney variety made of mint leaves along with tomato and coconut. This is very simple side dish which is very easy to make and it can be made in very less time. Lets look at the method of making this chutney.

Ingredients :
Oil - 3 tbspn
Channa dal - 2 tbspn
Red Chili - 2
Tomato - 1
Mint Leaves - 1 cup tightly packed
Coriander Leaves - fistful
Coconut - 2 tbspn
Salt - 1 tspn
Hing - 1/4 tspn
Temper :
Oil - 1 tspn
Mustard seeds - 1 tspn
Urad dal - 1 tspn
Method :
1. Heat the oil and add the channa dal. Once the dal turns golden add the red chili. Saute for a min then add tomatoes. Cook till tomatoes are soft.
2.Add the mint leaves and coriander leaves. saute and add the coconut. Mix well and turn off the stove.
3. Allow it to cool down. Add to blender along with salt and hing. Grind it to a fine paste.
4. Transfer to a bowl and mix water as required to adjust the consistency. It should not be watery. Heat oil and temper with mustard and urad dal. Once it turns golden add to chutney and mix well.
Serve the pudhina chutney with dosa.
