COCONUT RICE / THENGAI SADHAM
Coconut rice is a type of rice made with the flavor of coconut . This rice is made with coconut oil add an extra flavor to it. It can be served with stir fry vegetables or aviyal or appalam or chips. This is also made on special festival occasions such as kanu(kanum pongal) , aadi perukku etc.. Lets look at the procedure of making it.
Preparation Time:10 mints| Cooking Time : 20 mints|Severs: 2
Ingredients :
Raw rice - 1/2 cup
Water - 1.5 cups
Coconut Oil - 2 tbspn
Mustard seeds - 1 tspn
Channa dal - 1 tbspn
Raw Peanuts - 1 tbspn
Red chili - 1
Curry leaves - few
coconut - 1/2 cup shredded
Salt - to taste
Cashew - few (optional)
Steps :
1. Soak the raw rice for half an hour and strain it. Then add 1.5 cups of water and pressure cook it for three whistles. Once cool down open the cooker and spread in a plate. And allowed it to cool down.
2. Heat the oil in kadai and add the mustard seeds . Allow it to pop. Then add the channa dal,peanuts,chili and curry leaves. Once it turns golden add the coconut . Roast till the nice aroma comes.
3.Add the cooked rice and mix well and turn off the stove. Then add the salt as per taste and mix gently. Add the cashews fried in ghee.
Now its ready to serve.
My Notes :
Adding the cashews is completely optional.
While roasting coconut do it carefully. Dont make it burnt or color change.
If you like pepper flavor you can sprinkle little at the end while adding salt.
If you don't like the flavor of coconut oil,you can do it with oil of your choice.
