MILAGU RASAM
Milagu Rasam is the most popular traditional rasam popular in south India. It is is made of pepper and cumin seeds. It is very easy to make. It is good for cold and indigestion. It can be had with hot steamed rice with the topping of ghee. This is the usual rasam variety in my kitchen during the winter season. Lets look at the procedure of making this rasam.
Preparation Time : 20 mints | Cooking Time : 20 mints | Serves : 3
Ingredients :
Tamarind Extract - 1/2 cup
Tomato - 1 (small)
Curry Leaves - few
Coriander leaves - few
Salt - to taste
Hing - 1/4 tspn
Turmeric - 1/4 tspn
Ghee- 1tbspn
Water - as required
Mustard - 1 tbspn
Cumin seeds - 1 tspn
To Grind as paste :
Whole Black Pepper - 1 tspn
Cumin Seeds - 1 tbspn
Red Chili - 1
Coriander Seeds - 1 tbspn
Toor dal - 2 tspn
Directions:
1. So all the ingredients to grind with the warm water for 15 mints. Then grind it to a fine paste. In a bowl add the tamarind extract,tomato,curry leaves , hing , turmeric , salt and mix well.
2.Bring the tamarind mixture to boil and cook till the raw smell goes. Then add the grinded paste and cook till it form frothy . Then add the chopped coriander leaves to it. Turn off the flame.
3. Temper it with the mustard and cumin seeds and add it to rasam.
Milagu rasam is ready to serve with hot steamed rice.
My Notes :
1. Instead of soaking and grinding paste. You can also dry roast them and grind it to a paste.
2. If you like the flavor of garlic you can add the crushed garlic to the tamarind mixture.
