CARROT BEANS PORIYAL
Carrot Beans Poriyal is the easiest poriyal / stir fry recipe that can be made faster and simpler. There can be many poriyal made with carrot and beans separately. This i like because of adding coconut , onion and vegges together enhances the poriyal more. Lets look at the steps for making this.
Preparation Time:10 mints| Cooking Time : 20 mints|Severs: 3 Ingredients : Carrot - 1/2 cup finely chopped
Beans - 1/2 cup finely chopped
Onion - 1/4 cup finely chopped
Oil - 2 tbspn
Mustard seeds - 1 tspn
Urad dal - 1 tbspn
Curry leaves - few
Red Chili - 1
Water - as required
Salt - 1 tspn
Hing - 1 tspn
Turmeric - 1 tspn
Grated coconut - 2 tbspn
Steps :
1. In a pan heat the oil add the mustard , urad dal . curry leaves , red chili. Once the dal turns golden add the onions. Cook till the onions turns pink. Then add the chopped carrot beans . Stir well. Then add the salt,turmeric and hing along with required water to cook the vegetables.
2. Once the vegetables are cooked and water drained . Add the grated coconut and give a gentle mix . Then turn off the stove.
Serve the poriyal with sambar / rasam .
