PORICHA KUZHAMBU
Poricha Kuzhambu is a traditional brahmin dish made very often. It can be made with the cooked dal , grinded coconut paste with vegetables. We can make this kuzhambu with vegetables like carrot,potato,chow-chow, cabbage,brinjal or mixed vegetables. This is also called as poricha kootu. It can be had with rice or also with roti.

Ingredients :
Mixed Vegetables - 1 cup (used brinjal,potato and chow-chow)
Toor dal - 1/4 cup
Salt - to taste
Hing - 1/4 tspn
Turmeric - 1/4 tspn
Coriander leaves - few
Tempering :
Oil- 2 tbspn
Mustard seeds - 1tspn
Urad dal - 1/2 tspn
Curry leaves - few
For grinding :
Red chili - 2
Coconut - 4 tbspn
Cumin seeds - 1tspn
Preparations :
1. Pressure cook the dal for three whistle with turmeric. Cut the vegetables of your choice and boil with water along with turmeric.
2. Roast the red chili in a tbspn of oil and add it to blender along with cumin seeds & coconut . Grind it to fine paste.
3. In a pan take the boiled vegetables and cooked dal together. Add salt and hing as per your taste. Bring it to boil. Once it starts to boil then add the grinded paste and cook for 5 mints.Then add the chopped coriander leaves and tempering.
Now Serve Poricha Kuzhambu with Rice or Roti.
