THAYIR SADHAM/CURD RICE
Curd rice / Thayir sadam / Yogurt rice is super delicious rice variety popular in South India. Curd rice can be made plain or with tadka. It can be had with stir fry vegetables or pickles or with thuvayal. This is also called as daddojanam in Telugu . It is made by mixing the curd , warm milk , salt and tadka together. This is the everyday finishing meal in south indian lunch menu.

Ingredients :
Raw rice - 1 cup
Curd - 1/4 cup
Milk - 1/4 cup
Water - as required
salt - to taste
coriander leaves & grated carrot - as required
Tempering :
Oil - 1 tbspn
Mustard seeds - 1 tspn
Green chili - 1
Curry leaves - few
Method:
1. Soak the raw rice for half an hour. Add 3 cups of water and pressure cook it for three whistles. Once cool down open the cooker and mash the rice well with hand masher.
2. Add the curd, milk and mash well. Then add the required amount of water and salt to your taste. Mix well.
3. Heat oil and add the tempering items. Then add the tadka to the rice and stir well.
Now its ready to serve. Add carrots and coriander leaves while serving.
Notes :
If you like ginger , you can grated or chopped ginger and add while tempering.
If you like sweet curd rice , add fruits of your choice instead of carrot.
