RIDGE GUARD THUVAYAL/PEERKANGAI THUVAYAL
Ridge Guard Thuvayal / Peerkangai Thuvayal is a type of chutney that is made of combining the Ridge Guard,urad dal and red chili by shallow frying and grinding it to paste . It can be had with hot steamed rice on topping it with ghee. This is also goes well with idli , dosa or curd rice. The kootu varieties can be had as a side-dish for thuvayal.

Ingredients:
Oil - 3tbspn
Ridge Guard / Peerkangai - 1/2 (big sized)
Hing - little
Salt to taste
Urad dal - 2 tbspn
Red chili - 1 big
tamarind- 1 inch piece
To Temper:
Mustard seeds - 1/2tbspn
Urad dal - 1 tbspn
Method:
1. Wash the ridge guard and peel the harder skin of the ridge guard and chop the peerkangai roughly.
2.In a pan heat the oil and roast the urad dal and red chili until golden brown. Then transfer it to a bowl. Saute the peerkangai in the same pan with remaining oil and add it to the bowl.
3. Add the tamarind , hing and salt to the mixture and grind it to a paste. Temper it with mustard seeds and urad dal.
Now Ridge Guard Thuvayal is ready to serve with hot rice.
My Notes :
I like to prefer the thuvayal with the skin (thol). If you don't like then peel skin completely and grind it to a paste.
