SOYA CHUNKS BRIYANI / MEAL MAKER RICE
Meal maker or soya chunks is a soy flour product, a by-product of extracting soybean oil. It is often used as a meat analogue or meat extender. It is quick to cook, with a protein content far greater than that which comes from meat . Its rich in protein and fiber. Today we see on making a briyani with soy chunks instead of vegetables. Lets look at the recipe.

Ingredients :
Basmati Rice - 1cup
Water - 2 cups
Oil - 2 tbspn
Ghee - 2 tbspn
Cloves - 2
Bay leaf - 1
Star Annis -1
Cinnamon stick -1 inch
Mint leaves - fistful
Coriander leaves - fistful
Ginger & Garlic paste - 1 tbspn
Green chili - 1
Onion - 1 big
Tomato - 1 big
Soya Chunks - 1 cup
Salt - 1 tbspn
Red chili powder - 1 tbspn
Briyani Masala - 1 tbspn
Garam masala / Kitchen King Masala - 1/4 tbspn
Procedure :
1. Soak Basmati rice for 45 mints. Boil water and bring it to roll boil and turn off the stove . Then add cup of soya chunks to the boiled water and cover it for ten mints. Then strain the water from soya chunks. Roughly chop onion,g.chili,tomato,coriander leaves and mint leaves.
2. In a pressure cooking heat the oil and ghee, add whole spices, onion,g.chili , ginger garlic paste . Once its cooked add the tomatoes and saute well.
3. Add the red chili powder, briyani masala and garam masala and stir well. Add the soya balls , mint leaves , coriander leaves. Also drain water from rice and add to it.
4. Add water,salt and give a gentle mix. Once the water bubbles started close and pressure cook in a medium high flame for two whistle.
Serve Briyani with Raita.
Notes :
If you use big soya chunks then cut into small pieces and use it.
Increase or Decrease soya chunks as per the taste.
