VEGETABLE BRIYANI

Briyani is the most popular Lunch or Dinner Variety in India. There are various methods of preparing briyani. It various from place to place. Usally the briyani is made of assorted vegetable and Basmati rice with indian spices in dum style. But today i make the vegetable briyani with a easy method. That is i make this with pressure cooker. It is a one pot meal. Briyani is best and apt dish for the party and get together.

Preparation Time:15 mints| Cooking Time : 30 mints|Severs: 3

Ingredients :

Basmati Rice - 1cup

Water - 2 cups

Oil - 2 tbspn

Ghee - 2 tbspn

Cloves - 2

Bay leaf - 1

Star Annis -1

Cinnamon stick -1 inch

Cashews - 5

Mint leaves - fistful

Coriander leaves - fistful

Ginger & Garlic paste - 1 tbspn

Green chili - 1

Onion - 1 big

Tomato - 1 big

Mixed vegetables - 1 cup

Salt - 1 tbspn

Red chili powder - 1 tbspn

Briyani Masala - 1 tbspn

Garam masala / Kitchen King Masala - 1/4 tbspn

Procedure :

1. Soak Basmati rice for 45 mints. Chop the vegetables in even size . I used today carrot , beans , potato and peas. Chop onion,tomato and green chili lengthwise. Chop mint and coriander finely.

2. In a pressure cooking heat the oil and ghee, add whole spices, onion,g.chili , ginger garlic paste . Once its cooked add the tomatoes and saute well.

3. Add the red chili powder, briyani masala and garam masala and stir well. Drain the water from rice . Then add the chopped vegetables and rice to the cooker.

4. Add water,salt , chopped coriander , mint leaves and give a gentle mix. Once the water bubbles started close and pressure cook in a medium high flame for two whistle. Add fried cashew on top .

Serve Briyani with raita.

VEGETABLE BRIYANI

Notes :

Adding cashew is a optional one.
