SHALLOTS GARLIC VATHAL KUZHAMBU
Vathal kuzhambu is a traditional south Indian brahmin recipe made mainly with sundakkai vathal or other vathal along with shallots and garlic and its can be had with steamed rice and sutta appalam. This is so tasty and easy to make. Today i made it only with small onion and garlic. It can be made with vegetables like brinjal,drumstick,lady's finger etc..
Lets look at the steps for making this kuzhambu.
Preparation Time:10 mints|Cooking Time:30mints|serves:3-4
Ingredients:
Shallots - 12 nos
Garlic - 3 cloves
Tamarind Extract - 1cup
Sesame Oil - 5 tbspn
Mustard seeds - 1tspn
Channa dal - 1tbspn
Fenugreek seeds - 1/4 tspn
Curry Leaves - few
Red Chili - 1
Salt - 1tbspn
Sambar Powder - 1tbspn
Turmeric - 1tspn
Hing - 1tspn
Jaggery - 1 tspn
Rice flour - 1 tspn
Water - as required
Directions:
1. In a kadai heat oil add the mustard seeds,fenugreek seeds . Once its pop add channa dal, curry leaves , red chili . Then add the shallots and garlic.Cook till its turns pink . Add the turmeric , sambar powder , hing and mix well.
2. Then add the tamarind extract ,salt and cook for 5 mints. Then add jaggery and the rice flour mixed in water without lumps to the kuzhambu.Cook till it becomes thick. Then turn off the stove.
Serve with hot rice and appalam.
My Notes :
1. If you adding vathal fry it in sesame oil and add it to kuzhambu while adding jaggery.
