VANGI BATH RICE / BRINJAL RICE
Vangi Bath is a South Indian dish originated in Karnataka. Literal translation could be thought of, as fried brinjal rice.Typically found in Karnataka, spicier variety is often found in neighboring states Andhra Pradesh and Tamil Nadu. It is equally famous in Maharashtra. Mostly viewed as a dry dish, it is accompanied with Chips,Vadai ,Bajji or Raitha.

Ingredients:
Oil - 5tbspn
Brinjal - 3 medium sized
Cooked rice - 2 cups
Onion - 1/4 cup
Curry leaves chopped
Mustard seeds - 1/2tbspn
Hing - little
Salt to taste
Turmeric - 1/4tspn
To Grind:
Cinnamon - 1inch
cloves - 2
Channa dal - 2 tspn
Urad dal - 1tspn
Coriander seeds - 1tspn
Red chili - 1 big
Coconut - 3 tbspn
Sesame seeds - 1 tbspn (black)
Method:
1. First Prepare the Vangi bath Masala powder. Dry roast sesame seeds separately. In a tbspn of oil add all other masala except coconut and roast well. Then add coconut at last and roast for a minute. Add it to the mixer and make it as a coarse powder.
2.Keep the cooked rice ready . In a pan add mustard seeds and allow to pop then add the onion,curry leaves saute well. Then add the chopped brinjal and saute well .
3. Add salt,turmeric,hing to the brinjal . Cook till its soft then add the grounded masala powder and mix the rice well to it.
Vangi Bath is ready to serve with chips.
Notes:
1. You can add fried cashews to enhance flavors.
2. Also u can add sesame seeds less if you don't like the flavor.
