PARUPPU VADAI / MASALA VADAI
Vadai is a savory fried snacks from India. This is made by soaking and grinding the Channa dal . Vadas are often eaten as snacks or as an accompaniment to another dish. They are served with a variety of dips including sambar, watery or dry chutneys. This is also made on the festival occasions. This is called as paruppu vadai or masala vadai.

Ingredients:
Oil - for deep frying
Channa Dal - 3/4cup
Curry leaves - finely chopped
Coriander leaves - finely chopped
Hing - little
Green chili - 2
Salt - to taste
Turmeric - 1/4tspn
Ginger - 1 inch chopped
Directions:
1. Wash the Channa dal and soak it minimum for an hour. Drain the water completely. Then add the soaked dal along with salt,turmeric,green chili,hing and ginger. Grind it coarsely.
2. Add the chopped curry leaves and coriander leaves . Mix well. Heat the oil in a pan for deep frying. Make the vadas and deep fry it in oil in medium flame . Fry well by turning both sides.
3. Once the bubbles stops and turns golden. Remove from oil and keep in paper towel .
Now the masala vadai is ready to serve.
My Notes :
You can also use pattani paruppu instead of channa dal.
You can also add the finely chopped onions or shallots while adding curry leaves.
