GAJAR KA HALWA/CARROT HALWA
The gajar ka halwa was first introduced during the Mughal period and the name originates from the Arabic word "halwa", which means "sweet" and it is made from carrot (in Hindi: gajar) so that it is known as gajar ka halwa . Gajar ka halwa originally contained carrots, milk and ghee . It is the very easy dessert that can be done in home with readily available items. This dessert is more suitable for party and it last for many days when refrigerated.

Ingredients:
Carrot - 2 cups (Grated)
Milk - 2 cups (Full Fat Milk)
Ghee - 4 tbspn
Sugar - 1/2 cup
Fresh cream - 1 tbspn
Cardamom Powder - 1/4tspn
Chopped Nuts - 2 tbspn
Directions:
1. Peel the carrots and grate it . In a nonstick pan add 3 tbspn ghee and add the grated carrots. Cook for 5 mints until the raw smell of carrot goes.
2. Once the carrots are done add the milk and allow the carrots to cook in milk. Keep on stirring until the carrots absorbs all milk .
3. Once the milk reduced it gives a creamy texture. Then add sugar , cardamom and cook till sugar get dissolved and becomes halwa consistency.Then add the fresh cream.
4. Cook until it leaves the sides. Then add the chopped nuts and mix well.
Then halwa is ready to serve hot.
Notes:
You can also add mava/khoya for making halwa by reducing milk.
Also you can add the condensed milk or milk powder to enhance the taste. But sugar can be adjust accordingly.
I added the plain nuts. Instead you add by roasting it in ghee.
